In just a few days, most of us will be celebrating our favorite guys on Father’s Day, while many more will be hosting backyard cookouts throughout the season. Everyone will appreciate the lengths you’ve gone to make the day special, so take the time to offer a memorable menu.
There’s standard fare like burgers and hot dogs, which we love, but why not give guests the unexpected as well? Grilled vegetables are always a nice (and healthful) touch, as is a delicious fish option. Below is an easy-to-make recipe for grilled salmon teriyaki that’s perfect to serve alongside other outdoor party favorites.
Grilled Salmon Teriyaki
Ingredients
- 4 salmon filets (6 oz. each)
- ½ cup low sodium soy sauce
- ¼ cup brown sugar
- 2 cloves garlic, minced
- 1 tsp. fresh ginger, grated
- 2 Tbs. rice vinegar
- 1 Tbs. sesame oil
- 2 tsp. cornstarch
- 1½ Tbs. water
- green onion, sliced, for serving
- sesame seeds, for serving
Directions
To make the marinade, whisk together soy sauce, brown sugar, garlic, ginger, rice vinegar and sesame oil in a medium bowl. Reserve ½ cup; set aside.
Add the salmon filets to a resealable container and pour the remaining marinade over top. Mix well, seal and marinate for at least 30 minutes or up to overnight. Heat grill to 400°F. Grill salmon for 8–12 minutes, flipping once, or until the thickest part of the filet reaches 145°F.
Meanwhile, whisk together the cornstarch and water until well-combined. Add to a small saucepan over medium heat with the remaining ½ cup of marinade.
Bring to a boil over medium-low heat. Reduce heat to low and simmer for about 5 minutes, or until thickened. Remove from heat.
Brush teriyaki sauce on salmon after grilling, or serve on the side as a dipping sauce. Serve topped with sliced green onion and sesame seeds, if desired.
